Garlic-Free Pesto

(GF, DF, Vegan, Low FODMAP & Paleo)

Directions

1. Place hemp seeds or walnuts, lemon zest and lemon juice in a small food processor and pulse until finely chopped.

2. Add the basil leaves to the food processor.

3. Start processing the basil, hemp seeds or walnuts and lemon juice and zest. While processing, drizzle in olive oil little by little until you have achieved the consistency you like; try for something between a paste and a sauce.

4. Taste for flavour and add salt and pepper to taste. If you feel there is too much lemon, add in more olive oil.

5. Use as a topping for any protein such as chicken, shrimp, or fish, pasta or veggie dishes or egg recipes.

Notes

Instant Pot Option: You can also do this entire recipe in the instant pot. Brown the veggies or veggies and beans first and then add in all the additional ingredients and select the soup option for 30 minutes at normal pressure.

Ingredients

2 cups Basil Leaves (leaves only)

1/4 cup Garlic Infused Olive Oil (sub for olive oil if you are in a pinch or if you can tolerate garlic add 1-2 cloves)

1/4 cup Hemp Seeds Or Walnuts

2 Tbsp Lemon Juice (approx. 1 lemon, add more or less to taste)

1 Tbsp Lemon Zest (approx. 1 medium lemon)

Sea Salt & Black Pepper (add to taste)

Nutritional Yeast (optional, add to taste)
