Avocado and Hemp Seed Icing

Have you learned how to make some pretty incredible gluten free, vegan or paleo baking but are looking for a great icing to go on top that does not contain icing sugar? Do you have a child that is very sensitive to processed sugars, cannot have dairy or you just do not want to use store bought icing? I have you covered. This icing will take you 7 minutes with all of the prep included. Once you make it a few times, I bet you can shave that down to 5 minutes. My only suggestion is to try not to eat it all before it goes on your dessert.

Adding the coconut oil to this icing makes it ‘peak’ and spread like traditional icings do. We all know that avocados are a wonderful source of healthy fats but the added hemp seeds contain omega 3 fatty acids and are also a wonderful source of fibre. It is also homemade and contains zero dyes or preservatives.  So, you can feel pretty great serving this to your guests.  For the full recipe, the link is in my bio.

If you would like a suggestion for something delicious to pair the icing with, check out my Grain Free Avocado Brownies (link in bio or my website www.juliewalton.ca). If you add just a little extra coconut sugar, this recipe turns into a cake.  Spread some of the avocado & hemp seed chocolate icing on top and you are left with a full on birthday cake or dessert for guests that they will love.

Summer Time Chunky Guacamole

Who is in need of some guacamole? Oh man, I love the combination of lime and cilantro. It is one of my favourite taste pairings. And who doesn’t like a good avocado.

With summer here there are a lot of friends and family gatherings and camping trips. So, here is a great paleo, vegan, but mostly delicious recipe that is super easy to make. The best part though – there is no cooking. Also, this recipe leaves a lot of room to personalize it to your taste. With any of my recipes – I love it when people take them and make it their own. We all have different tastes and food preferences. You can omit the cilantro if you do not like it – my husband cannot stand cilantro – so we leave half aside for him without it and it still tastes great! (I LOVE cilantro though… so I feel like it needs it ;). If you do not like heat, just omit the Serrano or jalapeno peppers.  Make this your own and enjoy!

Extra Zesty Garlic & Lemon Vinaigrette

Summer is coming and that means so is salad season! A great way to save money is to make your own salad dressings.

This is such a versatile salad dressing. It is gluten free, paleo and can be made vegan. It is suitable for all veggie salads and with the 3-4 tsp of honey or coconut sugar, it makes a great dressing for salads containing fruits such as apples or strawberries (perfect for summer). I also love pouring it on sliced up avocados for a quick and yummy snack (my kids love this).
