Roasted Veggie Egg Cups (Paleo)

Who is looking for an easy protein packed breakfast that you can take on the go or enjoy at home?  Sometimes on a weekday it is nice to have some eggs but we don’t always have the time. I have tried a lot of egg cup recipes and none of them did it for me, so I decided to just make my own. I love this paleo egg cup recipe. It takes two of my favorite things and puts them together – roasted veggies and eggs. So, that is the secret you roast the veggies first! The second secret is Cassava flour! This stuff is amazing. It really binds the egg cups together and it helps to maintain the egg cup’s structure. Bake them on Sunday and you will have a quick and easy breakfast you can enjoy during the week that is packed full of protein and veggies. Enjoy!

Grain Free Banana Chocolate Chip Muffins

Are you looking for a gluten and dairy-free muffin that also happens to be grain free? Oh and one that is actually fluffy and delicious? I have you covered. When I was growing up, we would always take banana chocolate chip muffins camping and they were something I really looked forward to. However, after going gluten and dairy free, I have not found one that is spectacular. I love this recipe as you can make it grain free and without any added sugar (if you would like).
