I am going to show you exactly how I make my favourite cookies. I have been making them for years. They were the first recipe I absolutely fell in love with after I was told to eat a gluten-free diet. Stay tuned for my baking bloopers at the end. ⁠

I ate these through two pregnancies and two newborns. I had to have them in the freezer at all times. My kids eat these cookies now and when they run out, they beg me to make some more. ⁠

These cookies are so nutritious and filling and make an amazing snack to take on the run. This recipe is a great introduction cookie for anyone who is new to gluten or dairy-free baking and it is also a fabulous vegan snack.
